I've noticed sourdough has exploded in popularity over the past few years, and I'm genuinely curious about why. Is it the whole "slow food movement" thing, or do people just enjoy the satisfaction of maintaining a starter and creating something from scratch? I tried starting my own starter last month but gave up after two weeks when it smelled like gym socks.
