Best Budget Cameras for Wildlife Photography?

I'm getting seriously into wildlife photography but don't want to spend thousands right out of the gate. Has anyone here had good experiences with mid-range mirrorless cameras or quality DSLRs under $800? I'm particularly interested in gear that handles low-light situations well since I mostly do dawn and dusk shoots. Also curious about lens recommendations that won't break the bank but still give decent zoom and clarity. Would love to hear what your first "serious" camera setup was and whether you regret any choices you made!
